Cherry Limeade Ice Cream Tacos: The Summer Dream We Didn’t Know We Needed!

Okay, so… is there anything better than ice cream in taco form? I mean, seriously! I was just thinking about how hot it’s been and how I really need a dessert that screams summer vibes, and then BOOM—this genius idea popped into my head. Cherry. Limeade. Ice cream. IN A TACO. What even is life??

The finished dish — looks amazing, right?

Okay, Let’s Talk Ingredients

Alright, so picture this: you’re in the grocery store, and I’m dragging you through the aisles like “Get this, and this, oh and don’t forget the cherries!” 😂 Here’s the lineup:

2 cups cherry ice cream (seriously, don’t skimp here!)
1 cup limeade (the more tart, the better)
1 cup crushed graham crackers (you can use those leftover crumbs from your last baking adventure)
1/2 cup coconut water (totally a vibe)
1/4 cup agave syrup (or honey, if that’s your jam)
1/4 cup fresh lime juice (zesty goodness)
1/2 cup sweetened shredded coconut (because who doesn’t love coconut?)
1/4 cup chopped fresh cherries for garnish (we want it pretty!)
Lime wedges for serving (optional, but c’mon, they look cute)

So Here’s Why I Make This Constantly

Okay, real talk. Last summer, I made this for the first time when I was having a tiny backyard BBQ with my friends (you know, the one where someone accidentally set off the sprinkler?). Anyway, I had leftover cherry ice cream and a bottle of limeade that was just begging to be used. Long story short, I whipped this up, and OMG, everyone went bananas over it! I mean, who doesn’t love a dessert that combines two of the best things ever? Plus, it’s super easy—like, even your cat could make it if they had thumbs!

Another beautiful angle of the dish

Just as gorgeous from this angle too!

(Another beautiful shot because we can’t get enough!)

Here’s another angle because I can’t help myself! Look at these tacos!

The One Trick That Changes Everything

So here’s the deal—when you’re mixing the cherry ice cream and limeade, make sure you don’t overdo it! Just blend it enough to swirl together. You want ribbons of cherry and lime to dance together, not become a mushy mess. Trust me on this one. I kinda learned the hard way. 🙈

Don’t Mess This Up (My Top Tips)

1. Check your taco shells: If they’re too soggy, you’ll end up with a sad, drippy mess. You want them firm! (Trust me, I’ve learned!)

2. Use fresh cherries: The fresher, the better! Plus, they look super cute on top.

3. Chill out!: Seriously, let those taco shells chill in the fridge long enough to set. They need to be tough enough to hold all that deliciousness.

How to Keep Them From Disappearing (Or, How to Store Them)

Okay, so here’s the scoop (get it? 😂). If you have any leftovers—which is rare because these things are like a magnet for hungry humans—just pop ’em in an airtight container and keep ’em in the freezer. But let’s be real, they probably won’t last long because they’re too good!

If You Liked This, You’ll Probably Like These Too

Alright, if you’re feeling this vibe, you’ve gotta check out my:

1. Mango Sorbet Tacos: Same concept, different fruit. Pure bliss!
2. Peach Melba Sundaes: An oldie but a goodie—gotta love that classic combo!
3. Frozen Yogurt Bark: For when you want something a little lighter but still delicious!

So, tell me! What’s your go-to summer dessert? I’m always on the lookout for new ideas. 🍦💖
