Mermaid Magic in a Glass: Strawberry Watermelon Potion

Okay, so have you ever just needed a sip of summer? Like, you know those days when it’s blazing hot, and you’re just like “ugh, I need something cool and refreshing”? That’s when I whip up this Strawberry Watermelon Mermaid Potion. Seriously, it’s like drinking sunshine… in the best way possible!

The finished dish — looks amazing, right?

Okay, let’s talk ingredients! So, picture us in the grocery store, and we’re racing through the produce section. You grab the strawberries — 2 cups, fresh and juicy, hulled and sliced, just begging to be blended. Then we’re diving into the watermelon aisle—can’t forget the 3 cups of sweet, cubed watermelon. I know, I know, it’s like a watermelon festival in there! Next up, we need some coconut water (1 cup!), because hydration, right? And a splash (or a quarter cup) of lemon juice for some zesty magic. A little orange juice (another quarter cup) plus some zest for that pop of flavor. Oh, and vegan gelatin—just a tablespoon—to help it all set up like a jiggly dream. Mint leaves for garnish, obviously, because we’re fancy like that. Don’t forget ice! Ice is essential.

So here’s why this potion is special to me. A couple of summers ago, I had this epic beach day with friends, right? We were all sweaty and sandy, just lounging around, and one of my friends whipped up a fruit punch that tasted like pure joy. I was like, “I have to recreate this magic!” So I started experimenting, and after a few too many kitchen disasters (let’s not talk about the time I used too much lemon and it was basically sour juice), I landed on this! Now it’s my go-to for any hot day or just when I need a little pick-me-up. It takes me back to that beach day every single time. 🌊✨

Alright, the one trick that changes everything? STRAIN IT! Seriously, don’t skip the fine mesh sieve step. It’s like magic—turns that blended fruit mush into a smooth potion that makes you feel like a mermaid (or merman, no judgment here). You want it silky, not chunky, trust me!

And don’t mess this up! My top tips are to make sure your watermelon is sweet. I once got a dud, and it ruined the whole thing. Also, don’t over-blend the strawberries—just enough to break them down. Otherwise, it’s like a smoothie, not the potion of your dreams. Oh, and remember to chill it! I mean, who wants a lukewarm mermaid potion? Yuck!

Just as gorgeous from this angle too!

How to keep them from disappearing? Honestly, good luck! But if you must store this goodness, pour any leftovers into an airtight container and keep it in the fridge. It should last a day or two, but I doubt it’ll stick around that long (it’s too good!).

If you liked this, you’ll probably like my Pineapple Coconut Slushies, or maybe a classic Lemonade with a twist, or even my Berry Smoothie Bowl if you’re feeling a bit more breakfast-y. Seriously, all of them are winners.

So, what do you think? Are you ready to make this potion magic happen? Let me know if you try it—can’t wait to hear your summer sip stories! 🍉🍓✨
