Ingredients
- 1 cup fresh strawberries, hulled and sliced
- 2 cups watermelon, diced and seeds removed
- 1/4 cup agave syrup + lime juice (for flavor)
- 1/4 cup water
- 1/4 cup Vegan Gelatin
- Optional: sugar for coating the gummies
Instructions
- In a blender, combine the fresh strawberries and diced watermelon. Blend until smooth, then strain the mixture through a fine mesh sieve to remove any pulp. You should have a smooth juice.
- In a small saucepan, combine the watermelon-strawberry juice, agave syrup + lime juice, and water. Heat over medium heat until warm but not boiling.
- Sprinkle the Vegan Gelatin over the warm juice mixture and stir continuously until fully dissolved.
- Once the Vegan Gelatin is dissolved, remove the saucepan from heat and let the mixture cool slightly.
- Pour the mixture into gummy molds, filling each cavity about three-quarters full.
- Place the molds in the refrigerator and allow them to set for at least 2-3 hours, or until firm.
