  • 2 cups dried hibiscus flowers
  • 4 cups water
  • 2 ripe peaches, sliced
  • 1/4 cup honey or agave syrup
  • 1 tablespoon alcohol-free vanilla extract
  • 4 cups sparkling water
  • Ice cubes
  • Fresh mint leaves (optional)

Instructions

  1. Boil 4 cups of water in a medium saucepan. Add dried hibiscus flowers and reduce heat to low. Simmer for 10 minutes.
  2. Strain the tea into a large pitcher, discarding the flowers. Stir in honey or agave syrup and vanilla extract until dissolved while still warm.
  3. Cool the tea to room temperature, then refrigerate until chilled.
  4. Add sliced peaches to the chilled tea and stir gently.
  5. Fill glasses with ice cubes, pour hibiscus mixture over ice, filling two-thirds full.
  6. Top each glass with sparkling water and stir gently.
  7. Garnish with fresh mint leaves if desired and serve immediately.
