  • 1 tablespoon fresh ginger, grated
  • 4 cups water
  • 2 tablespoons honey or agave syrup (to taste)
  • 1 cup coconut water
  • 1 tablespoon vanilla extract (alcohol-free)
  • Sparkling water or soda
  • Ice cubes
  • Fresh mint leaves (for garnish)

Instructions

  1. Boil 4 cups of water in a saucepan. Add dried hibiscus flowers and grated ginger; simmer for 10 minutes.
  2. Remove from heat and strain into a bowl, discarding solids. Stir in honey or agave syrup until dissolved.
  3. Cool the mixture to room temperature, then refrigerate until chilled.
  4. Combine 1 cup of the hibiscus ginger concentrate with 1 cup coconut water and vanilla extract.
  5. Fill glasses with ice cubes and pour the hibiscus mixture halfway.
  6. Top each glass with sparkling water or soda to your desired fizz level.
  7. Garnish with fresh mint leaves and serve immediately.
