Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1 cup lime juice
  • 1 cup coconut water
  • 1/2 cup sugar
  • 1 cup water
  • 1 tablespoon Vegan Gelatin
  • Zest of 1 lime

Instructions

  1. In a blender, combine the pitted cherries, lime juice, coconut water, and sugar. Blend until smooth.
  2. In a small saucepan, heat the water over medium heat. Once warm, sprinkle the Vegan Gelatin over the water and stir until dissolved.
  3. Remove the saucepan from the heat and let it cool slightly. Then, mix the dissolved Vegan Gelatin into the cherry-lime mixture.
  4. Add the lime zest to the mixture and stir well.
