Okay, so let’s be real for a sec. Who doesn’t love a fun, wobbly treat? I mean, jelly is like the childhood dream we never really outgrew, right? These Refresher Jelly Cubes are my go-to when I need a little pick-me-up or just wanna impress my friends with something super cute and colorful.

The finished dish — looks amazing, right?

Okay, Let’s Talk Ingredients

Alright, so here’s the deal—grab your bags, we’re hitting the grocery store! You’re gonna need:
2 cups coconut water (this stuff is like liquid sunshine, trust me)
1/2 cup orange juice (fresh is best, but do you, boo) + a zest of an orange (for that zing!)
1/4 cup apple juice (go for the lightly spiced one, it’s a game changer)
1/4 cup Vegan Gelatin (I know, I know, sounds weird but it’s sooo worth it)
1/4 cup fresh mint leaves (chop ‘em up like you mean it)
1 tablespoon Vanilla Extract (make sure it’s alcohol-free unless you wanna party)
1 tablespoon honey or agave syrup (optional, but why not add a lil sweetness?)
Fresh fruit (like berries or citrus slices) for the bling-bling on top.

Honestly, it’s like a tropical vacation in a bowl. You feel me?

So Here’s Why I Make This Constantly

Okay, picture this: it’s a hot summer day, you’re at a BBQ, and everyone’s sweating bullets. You whip these babies out of the fridge, and suddenly—boom—everyone’s attention is on YOU. I made these for the first time when I was trying to impress this crush of mine (spoiler alert: it worked!). So, now, every time I make them, I think of that day and the giggles and the sunshine. They’re a hit every time! Plus, they’re vegan, so everyone can dig in without worry. Major win.

Just as gorgeous from this angle too!

The One Trick That Changes Everything

Alright, listen closely. When you’re sprinkling that Vegan Gelatin over the juice mixture, DO IT SLOWLY. Seriously. If you just dump it all in, you’ll end up with clumps, and nobody wants jelly with weird rubbery bits. Just whisk it in gradually, and watch it dissolve like magic. It’s like a cooking spell.

Don’t Mess This Up (My Top Tips)

Chill it out: Seriously—make sure it sets for at least 4 hours. I once tried eating it after 2, and let’s just say… mushy, sad jelly is not the vibe.
Mold Matters: Silicone molds are your besties here. They pop out so easily and look super fancy. Trust me, one time I used a glass dish and nearly lost my cool trying to get those cubes out!
Garnish like a pro: Throw some fresh mint or fruit on top before serving. It’s all about the presentation, my friend!

How to Keep Them From Disappearing (Or, How to Store Them)

If you wanna keep your jelly cubes fresh, store them in an airtight container in the fridge! They’ll last about a week, but honestly… good luck keeping them around that long. They’re just too darn good!

If You Liked This, You’ll Probably Like These Too

So, if you’re into refreshing treats, you might wanna check out my Fruity Popsicles or the Chia Pudding Parfaits. Both are equally delicious and super easy to whip up!

So, what do you think? Are you ready to make these jelly cubes and blow your friends’ minds? Let me know if you try ‘em out! I’d love to hear your stories, too! 🍊🍃
