Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups watermelon, cubed
  • 1/2 cup coconut water
  • 1/4 cup lemon juice
  • 1/4 cup orange juice + a bit of orange zest
  • 1 tablespoon Vegan Gelatin
  • 1/4 cup sugar (or to taste)
  • Fresh mint leaves for garnish

Instructions

  1. In a blender, combine the sliced strawberries and cubed watermelon. Blend until smooth.
  2. In a small saucepan, heat the coconut water over low heat. Once warm, stir in the sugar until dissolved.
  3. Sprinkle the Vegan Gelatin over the warm coconut water and stir until fully dissolved. Remove from heat.
  4. In a mixing bowl, combine the strawberry-watermelon puree with the dissolved coconut water mixture, lemon juice, and orange juice + a bit of orange zest. Mix well.
