  • 1 cup almond milk
  • 1/2 cup maple syrup
  • 2 tablespoons dried culinary lavender
  • 1 teaspoon alcohol-free vanilla extract
  • 1 tablespoon vegan gelatin
  • 1/4 cup water
  • A pinch of salt

Instructions

  1. In a saucepan, heat almond milk and dried lavender until simmering. Remove from heat and steep for 15-20 minutes.
  2. Strain the lavender from the almond milk into a bowl.
  3. In another bowl, mix coconut cream, maple syrup, vanilla extract, and salt until combined.
  4. Dissolve vegan gelatin in water; microwave for 10-15 seconds until dissolved.
  5. Combine lavender-infused almond milk with the coconut mixture; stir in dissolved gelatin.
  6. Pour into an ice cream maker and churn according to instructions until soft-serve consistency.
  7. Freeze in an airtight container for at least 4 hours until firm.
  8. Let sit at room temperature briefly before serving.
