  • 1 cup apple cider vinegar
  • 1/2 cup fresh pineapple, diced
  • 1/2 cup fresh mango, diced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 1 tablespoon vanilla extract (alcohol-free)
  • 1/4 cup honey or agave syrup (to taste)
  • 1 cup water

Instructions

  1. In a saucepan, combine coconut water and apple cider vinegar. Heat over medium until warm.
  2. Stir in diced pineapple and mango; simmer for about 10 minutes.
  3. Remove from heat and let cool slightly.
  4. Add mint and basil, gently muddling to release flavors.
  5. Mix in vanilla extract and honey/agave syrup until dissolved.
  6. Pour into a clean jar; seal tightly and refrigerate for at least 24 hours.
  7. After steeping, strain through a fine mesh sieve into a clean container.
  8. To serve, mix shrub with sparkling or tonic water to taste.
