  • 4 cups water
  • 2 tablespoons jasmine tea leaves
  • 1 pomelo, peeled and segmented
  • 2 tablespoons honey or agave syrup
  • 1 cup sparkling water
  • Fresh mint leaves for garnish
  • Ice cubes

Instructions

  1. Boil the water in a medium saucepan. Once boiling, remove from heat and add the jasmine tea leaves. Let steep for about 5 minutes.
  2. Strain the tea into a large pitcher, discarding the tea leaves. Allow the tea to cool to room temperature.
  3. Once the tea has cooled, add the honey or agave syrup and stir until dissolved.
  4. Add the pomelo segments to the pitcher, gently pressing them to release some juice.
  5. Refrigerate the mixture for about 30 minutes to chill.
  6. Just before serving, add the sparkling water to the chilled tea mixture and stir gently.
  7. Fill glasses with ice cubes and pour the sparkling jasmine and pomelo tea over the ice.
  8. Garnish each glass with fresh mint leaves and serve immediately.
