  • 2 ripe plums, pitted and chopped
  • 1 tablespoon grated fresh ginger
  • 1/2 cup sugar (or to taste)
  • 4 cups water
  • 1/2 cup freshly squeezed lemon juice
  • Ice cubes, lemon slices, and mint leaves for garnish

Instructions

  1. In a medium saucepan, combine plums, grated ginger, sugar, and 1 cup of water. Simmer over medium heat for 5-7 minutes until the sugar dissolves and plums release their juices.
  2. Remove from heat and let cool for a few minutes.
  3. Strain the mixture through a fine mesh sieve into a large pitcher, pressing solids to extract as much liquid as possible.
  4. Add remaining 3 cups of water and lemon juice to the pitcher. Stir well and adjust sweetness as desired.
  5. Refrigerate for at least 1 hour before serving.
  6. Serve over ice in glasses garnished with lemon slices and mint leaves.
