  • 4 ripe kiwis, peeled and chopped
  • 1/2 cup fresh lime juice
  • 1/2 cup sugar
  • 1 cup water
  • Zest of 1 lime
  • Pinch of salt

  1. In a medium saucepan, heat water and sugar over medium heat until the sugar dissolves completely. Remove from heat and let cool.
  2. Blend the chopped kiwis, fresh lime juice, lime zest, and a pinch of salt until smooth.
  3. Once cooled, combine the simple syrup with the kiwi mixture in the blender and blend until well mixed.
  4. Pour into a shallow dish and freeze.
  5. After 1 hour, scrape the mixture with a fork to break up ice crystals.
  6. Continue to freeze, scraping every 30 minutes until firm and fluffy (about 3-4 hours).
  7. Let sit at room temperature for a few minutes before serving.
