  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 4 cups coconut water
  • 1 cup cooled herbal tea (juniper or rosemary)
  • 1/4 cup orange juice + zest
  • 1 tablespoon Vegan Gelatin
  • 1 tablespoon Alcohol-Free Vanilla Extract
  • Fresh edible flowers (for garnish)
  • Ice cubes

Instructions

  1. In a medium saucepan, combine the mixed berries and coconut water. Heat over medium heat until berries release their juices (5-7 minutes).
  2. Strain the mixture through a fine mesh sieve into a bowl, pressing down the berries to extract liquid. Discard solids.
  3. Dissolve Vegan Gelatin in 1/4 cup warm water according to package instructions; stir until fully dissolved.
  4. Add cooled herbal tea, orange juice with zest, and Vanilla Extract to the berry liquid; mix well.
  5. Whisk in dissolved Vegan Gelatin until fully incorporated.
  6. Pour the mixture into a mold or container and refrigerate for at least 4 hours, or until set.
  7. Once set, cut into cubes or desired shapes.
  8. Serve over ice cubes and garnish with fresh edible flowers.
