  • 1 cup fresh lime juice
  • 4 cups sparkling water
  • 1/4 cup sugar or sweetener of choice
  • 1/4 cup probiotic culture (such as kefir or a probiotic powder)
  • Zest of 2 limes
  • 1 tablespoon grated ginger
  • Ice cubes (optional)

Instructions

  1. In a large bowl, mix chopped coriander leaves, lime juice, sugar, grated ginger, and lime zest until the sugar dissolves.
  2. Gently stir in the probiotic culture.
  3. Cover the bowl with a clean cloth and let it ferment at room temperature for 24 hours.
  4. Taste the mixture; if it’s tangy and slightly fizzy, it’s ready. If not, let it ferment for a few more hours.
  5. Strain the mixture through a fine mesh sieve into a pitcher to remove solids.
  6. Slowly add sparkling water while stirring gently.
  7. Serve over ice if desired and enjoy! Store in the refrigerator for up to a week.
