  • 1 tablespoon coriander seeds
  • 4 cups carbonated water
  • 1/4 cup fresh lime juice
  • 1/4 cup sugar (or to taste)
  • 1/4 cup apple cider vinegar
  • 1/4 cup probiotic yogurt or kefir
  • Lime slices for garnish
  • Fresh coriander leaves for garnish

Instructions

  1. Toast coriander seeds in a small saucepan over medium heat for 3-4 minutes until fragrant. Let cool, then crush using a mortar and pestle or spice grinder.
  2. In a large bowl, mix crushed coriander, carbonated water, lime juice, sugar, and apple cider vinegar until sugar dissolves.
  3. Gently stir in probiotic yogurt or kefir.
  4. Cover the bowl with a clean cloth and let it sit at room temperature for 24 hours to ferment.
  5. Taste and adjust sweetness or acidity as desired. Transfer to bottles, leaving space at the top.
  6. Seal bottles and refrigerate for at least 4 hours to chill and carbonate.
  7. Serve over ice, garnished with lime slices and fresh coriander.
