Ingredients

  • 1 cup fresh or frozen cherries, pitted
  • 2 cups coconut water
  • 1 tablespoon honey (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon Vegan Gelatin
  • 1/4 teaspoon almond extract + sugar syrup
  • A pinch of salt

Instructions

  1. In a small saucepan, combine coconut water and cherries. Simmer for about 5 minutes until cherries are soft.
  2. Remove from heat and let cool slightly.
  3. In a separate bowl, dissolve Vegan Gelatin in warm water.
  4. Blend the cooled cherry mixture until smooth.
  5. Strain through a fine mesh sieve into a bowl to remove solids if desired.
  6. Stir in dissolved Vegan Gelatin, honey (if using), lemon juice, almond extract + sugar syrup, and salt until well combined.
  7. Pour into a mold or container and refrigerate for at least 4 hours until set.
  8. Cut into squares or scoop servings and enjoy.
